STYLE: Alternative Ferment

SWEETNESS: Semi-dry, Final Gravity 1.006 


ALCOHOL PERCENTAGE: 6.7% abv. 



AROMA & FLAVOR: Notes of dark cherry and red huckleberry on the nose. Fruity, woody and a little sour funk. Tart stonefruit, cherry and sweet raspberry with a smooth oak structure.


APPLE VARIETIES: Fermented on the farm with a blend of apples harvested locally from the Olympic Peninsula and organic dark cherries.


CIDERMAKER NOTES: We macerated, pressed, and wild fermented organic cherries on French oak to create a sour cherry wine. While the cherries were fermenting we also started a cider fermented in stainless tanks using a blend of Lactobacillus and Brettanomyces. These two were  then blended together to meld into this deep-thinking cider of ancient roots, here from the land and there from the legends of fermentation. This bottle is a tribute to the restoration of the salmon-bearing creek that runs through Finnriver. This creek waters our orchard and runs through our apples, and therefor our cider! It also harkens to the Belgium tradition of sour beer, called “Kriek,” that uses cherries.


SERVING SUGGESTIONS: Best with dry, salty cheeses or a snack of sweet potato fries. Try it with a walk by your local creek.
