Farmcrafted in the traditional Port style, our Spirited Blackberry Wine begins with whole-berry fermentation, allowing natural enzymes to gently break down the fruit and release rich, concentrated juice. After fermentation, the wine is settled and filtered, then aged with a medium-toast oak spiral to build layers of flavor and structure. We then fortify the wine with custom-distilled apple brandy, crafted by Washington distillers from our own Finnriver cider—adding depth and spirit. Finally, the wine is barrel-aged until bottling, resulting in a bold, balanced dessert wine that expresses the true character of our region. Sweet.
