CIDERMAKER NOTES
Our Special Release ciders often celebrate the spirit of collaboration, interdependence, and deep reverence for the wild bounty that surrounds us—brought to life through the art of co-fermentation. For this release, nearly one thousand pounds of wild-foraged Shiro plums, handpicked from our lush Olympic Peninsula, were co-fermented with locally harvested and organic apples. Fermentation unfolded slowly and at cold temperatures, a method chosen to preserve the plums’ delicate floral aromas and bright stone fruit character. The cider was then gently racked and cold-crashed, locking in a crisp natural sweetness and offering a finish that’s both vibrant and refreshingly pure. Semi-dry.
SUGGESTED PAIRINGS
Pair with a savory fruit-glazed bone-in pork chop and roasted seasonal squash. Shiro Plum also intertwines well with natural honeycomb or a rich honey-infused gelato.
APPLE VARIETIES
Organic Granny Smith & Pink Lady apples, with a blend of locally harvested Gravenstein apples.
