CIDERMAKER NOTES

Rooted in the rhythms of the land, this pét-nat cider is a true expression of orchard and wild edge. Bottle conditioned and carrying its natural sediment, it unfolds dry and astringent, with a firm tannic back- bone shaped by a blend of organic cider crabapples and wild-foraged seedling pears. An untamed effervescence lifts earthy orchard notes and subtle pear aromatics, while the crabapples lend structure, grip, and a lingering bite. Bright yet grounding, this farmstead cider reflects heritage fruit, patient craft, and the honest wildness of the season. Dry.

Pop the top to pair with any celebration or gathering. An excellent companion to creamy brie, rich pork dishes, and freshly shucked oysters.

Virginia Hewes crab apples (Sequim/Finnriver/com- munity-harvested), crab apples (community-harvest- ed), and Majors and Williams’ Pride apples from Finnriver (almost single-varietal).
