AROMA & FLAVOR


Smells of leather and tart fruit, hay bales and wine. Roving acids carry notes of sweet pear and caramel. Strikingly sharp, held in balance by puckish tannins from apple and barrel.

Finnriver homegrown organic Hewe’s Virginia Crab and William’s Pride, and a touch of Stellar J organic blueberries.


CIDERMAKER NOTES


This year's vintage looks to highlight the sharp and powerful acids and delicate tannins of the Hewe's Virginia Crab. We fermented the crab apples dry and aged them in neutral American oak barrels. Extended aging allowed for the aggressive acidity of the crab apples to mellow and soften. We then took whole organic blueberries from Stellar J Farm and fermented a blueberry wine using native wild yeasts. The wine was blended with the Hewe's crab while still fermenting, allowing for a secondary wild fermentation in the cider. The result is a tart and bold cider with a delicate note of blueberry and a bit of wild fermented complexity. Sweetened just enough to moderate the bold acids and highlight the fruity notes of the blueberries.
